Ground Chicken and Eggplant Casserole Here is my fantastic recipe for Ground Chicken and Eggplant Casserole! For this recipe you will need. 1 eggplant 1 red onion medium sized 1 red bell pepper 1 celery stalk 1 clove fresh garlic 1 egg 1 pound ground chicken 1/2 teaspoon salt 1/2 teaspoon pepper 1 teaspoon italian seasoning 1 cup fresh bread crumbs 1/2 cup heavy cream 1 half cup 4 cheese blend or cheese of of your liking olive oil (add more salt or pepper to your liking) Pre heat the oven to 375 degrees. In a pan saute the onions, red onion, bell pepper and celery until vegetables are just soft. About 3 minutes over medium. Then add garlic and cook for another 30 seconds until garlic is tender.
