Eggplant and Ground Chicken Casserole Recipe

Ground Chicken and Eggplant Casserole 
















Here is my fantastic recipe for Ground Chicken and Eggplant Casserole!

For this recipe you will need.

1 eggplant
1 red onion medium sized
1 red bell pepper
1 celery stalk 
1 clove fresh garlic
1 egg
1 pound ground chicken
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon italian seasoning
1 cup fresh bread crumbs
1/2 cup heavy cream
1 half cup 4 cheese blend or cheese of of your liking
olive oil
(add more salt or pepper to your liking) 


Pre heat the oven to 375 degrees.

In a pan saute the onions, red onion, bell pepper and celery until vegetables are just soft.  About 3 minutes over medium.  Then add garlic and cook for another 30 seconds until garlic is tender.  Put veggies into a casserole dish. 

 Then put about a half cup water into the pan and throw in a eggplant that has been cut into small cubes.  Steam the eggplant until it is very soft and all the water has evaporated.  Put the eggplant into the dish.  Cook the chicken until brown and add salt and pepper to the chicken.  After the chicken is fully cooked! Make sure there is no pink.  Place the chicken into the casserole pan after it is brown.

Now go ahead and add in an egg, the heavy cream, the cheese and bread crumbs leaving a little bit of bread crumbs to sprinkle on top.  After the dish is well mixed place into the oven and back for about 25 minutes.
